The History of the Stroopwafel: From "Poor Man’s Biscuit" to Global Icon
• The Secret Syrup: Unlike traditional Belgian waffles, the Dutch stroopwafel is made from a stiff dough of flour, butter, brown sugar, yeast, milk, and eggs. The “magic” happens with the stroop (syrup). Historically, bakers would boil down sugar, butter, and cinnamon to create a glue-like consistency that allowed two thin wafers to stick together without falling apart.
• The 19th Century Boom: By the mid-1800s, there were over 100 stroopwafel bakers in Gouda alone. As ingredients like white flour and cane sugar became more affordable, the recipe evolved into the buttery, spiced delicacy we recognize today.
• A National Treasure: For over a century, the recipe remained a strictly guarded secret in Gouda. It wasn’t until the 1870s that the cookie began appearing at markets outside the city. Today, it is the most famous Dutch export, enjoyed by millions worldwide.
• The Modern Tradition: The “proper” way to eat a stroopwafel hasn’t changed in 200 years: place it on top of a hot cup of coffee or tea for two minutes. The steam softens the waffle and melts the syrup inside, creating the perfect chewy texture.
Frequently Asked Questions - FAQ

Yes! You will learn the secrets of making the perfect spiced dough and the signature buttery caramel syrup (stroop) that holds the two waffle halves together. We have many toppings to add even more flavour.
